The Recipe I Can’t Stop Making
We had our first snow of the year yesterday in the Ottawa region (where I live). My TV is playing the fireplace channel as I type this. Multiple strands of fairy lights are strung across my apartment. I’m officially in hibernation mode.
As soon as the weather started to turn colder last month, I remembered a recipe I discovered last winter — one that might actually be the perfect winter recipe. I’ve made it three times in the past month so I thought I’d share it here in case it’s up your alley too.
In the dreamland of my mind, these are the kitchens in which said recipe would be prepared.
Here’s why I love this recipe:
It’s total comfort food - warm, soft, and nourishing. Basically the fireplace channel for your insides.
It’s dairy-free, gluten-free, and Keto/Paleo/Whole30-friendly, though you’d never know it. It tastes completely indulgent.
It’s easy to make and stretches into multiple meals. My husband and I usually get about eight servings, though that depends on your portion sizes.
The recipe is this Easy Chicken Divan Casserole.
It calls for cauliflower rice, which I’d never made before and thought it might be a pain in the butt, but it turned out to be very simple. Just chop up the raw cauliflower, pulse it in a food processor until it looks like rice, and you’re done. The rest of the recipe is straightforward, and the end result is extremely satisfying (and healthy!). It’s a small thing, but it makes these darker evenings feel a bit more like this:
